I love these and they are great for anyone on a low-carb, no-carb, or gluten free diet.
- 3 eggs
- 3 tblsp softened cream cheese
- 1/4 tsp cream of tartar
- salt or sugar (depends on if you want them sweet or savory)
Pre-heat the oven to 300F. Separate the eggs into two bowls (yolks in one, whites in the other). Add the cream cheese and salt (or sugar) to the egg yolks and blend until smooth. Add cream of tartar to the egg whites and whip with a mixer until fluffy with stiff peaks.
Slowly fold the egg yolk mixture to the egg whites.
Place dollops onto a non-stick cookie sheet. Bake for 15 – 30 minutes (keep a close eye and take out when they begin to turn golden brown).
