- 1 – 1.5lbs Pork Loin
- 3 Granny Smith Apples, diced
- 1/2 – 1 cup carrots, sliced
- Fresh ginger, sliced/diced, to taste
- 2 cups white wine
- 3 tsp ground ginger
- Maple Syrup or Brown sugar (to taste – I recommend 3 tsp)
In a 1 qt. crock pot, place the apples at the bottom, followed by the carrots and fresh ginger. Place the pork loin on top (cut in half to make fit).
In a measuring cup, measure out 2 cups of white wine and whisk in the ground ginger (if opting to add brown sugar, also whisk into the wine). Pour the wine mixture of the pork loin. Add salt and pepper to taste.
Set the crock pot on high for 1-2 hours, then turn down to low and let simmer for an additional 4-6 hours, or until the pork loin is fork tender (falls apart when separated with a fork).
